Appearance is, in fact, the first indicator of quality: the absence of marks, lines, or scuffs signals good craftsmanship. A fine bar will have a glossy finish and break with a clean snap, without crumbling.

The aroma should be rich in notes, while the flavour should strike a pleasant balance between sweetness and bitterness — the signature combination of the type of cocoa used.
